Potato Soup

Everybody has a comfort food that they run to when the days are stressful and they feel like they need a hug.

Mine is potato soup, its really good on a cold day and I need to warm up. I posted both recipes here.

One is potato soup with fried bacon and the other one is with bacon bits.

So put on the comfy socks and grab a bowl or mug.

 

Potato Soup  

32 oz of chicken broth 

2 to 3 pounds of potatoes, scrubbed, peeled and diced 

1 onion chopped 

1 tablespoon of minced garlic 

2 tablespoons of butter 

2 tablespoons of flour 

4 oz of cream cheese 

½ teaspoon of salt or in my case to taste 

½ teaspoon of pepper same thing here to taste 

Thyme 

Bacon bits  

Instructions:  

In medium pot add cubed potatoes, chicken broth. 

 Cook Potatoes in broth over medium heat for about 12 to 15 minutes or until potatoes are tender when stuck with a fork. 

 In a large skillet over medium heat  melt butter, add onions, garlic, and sauté until the onions are translucent. 

Sprinkle flour over the butter mixture , cook for a minute or two. The butter and flour mixture should become thick. 

 Add the butter mixture to the potatoes and stir until soup mixture is well blended. 

Add the cream cheese and stir until it has melted. Add the salt, black pepper and thyme and bacon bits. 

Serve Hot 

Potato Soup with fried bacon  

32 oz of chicken broth 

2 1/2 to 3 pounds of potatoes, scrubbed, peeled and diced 

1 onion chopped 

1 tablespoon  of minced garlic 

2 tablespoons of flour 

4 0z. Cream cheese 

1/2 teaspoon of salt or salt to taste 

1/2 teaspoon pepper or pepper to taste  

Thyme ( a dash or two) to taste 

Bacon (fried) 

Instructions:  

In medium pot add cubed potatoes, chicken broth. 

Cook Potatoes in broth over medium heat for about 12 to 15 minutes or until potatoes are tender when stuck with a fork. 

In a large skillet, cook bacon until crispy but not burnt, remove the bacon and drain on paper towel. 

Sauté chopped onions and  minced garlic until the onions are translucent. 

Sprinkle flour over the onion and garlic, cook for a minute or two. The flour mixture should be thick. 

Add the onion and garlic mixture to the soup mixture, stir until well blended. 

Cut cream cheese up into blocks and add to the soup mixture. Stir until it is melted.  

Add the salt and pepper and thyme. Stir until well blended.  

Crumble bacon up into the potato soup.  

Serve Hot
